Chef Michael Ayoub of Fornino restaurants in Brooklyn prepared baked eggs in the Good Day Cafe.

Eggs al Forno

Fennel Sausage, Spinach and Heirloom Tomato Pizza

1 Pizza Dough Ball (8oz)

4 oz Loose Fennel sausage

4 oz Mozzarella cubed

1 cup Fresh Spinach Leaves

8 Heirloom Cherry tomatoes (cut in 4)

3 small eggs

Extra Olive Oil

Parmesan Cheese Grated

1. Stretch dough round, place spinach, mozzarella and sausage on pizza dough in this order, crack eggs and place (Carefully) in pizza, scatter tomatoes place pizza in 450-500 degree oven.

2. Sprinkle parmesan and serve

In Casserole or Metal Skillet (8 inch)

Greenmarket Roast Vegetables & Eggs

2 cups seasonal vegetables cut into 1 inch cubes

2 cloves garlic

3 small eggs

Pecorino Cheese grated

Extra Virgin Olive Oil

Salt and pepper

1. Roast Vegetables with a little olive oil in oven, when par cooked, getting a little soft, crack eggs onto vegetables, return to 450 degree oven cook till egg are set and done to liking

2. Sprinkle pecorino, salt and pepper

3. Serve

Heirloom Tomato Frittata ( 8 inch sautee pan)

1 cup Heirloom Tomatoes cubed

3 oz cubed mozzarella

2 cloves garlic (Chopped fine)

3 springs Italian Parsley

3 oz milk

2 oz pecorino cheese grated

8 large eggs (whisked)

Extra Virgin Olive Oil

Salt and Pepper

1. Heat pan with little oil, cook garlic on a low fire. Mix eggs and milk and Half the pecorino. Season with salt and Pepper.

2. Pour into pan, raise heat to medium. Scatter mozzarella cubes and tomatoes. Bake in 400 degree oven till firm

3. Top with remaining pecorino cheese and torn parsley

4. Enjoy
