Food as medicine: Preventing cognitive decline

Alzheimer's is the sixth leading cause of death in the United States.  And, as we age we, there are ways we can prevent cognitive decline starting with what we eat.

Dietitian Ali Miller of Naturally Nourished is has some food as medicine tips.

RECIPE:  Naturally Nourished Raw Walnut Fudge

  • 1 cup walnuts soaked for 2-4 hours, strained
  • 1/3 cup raw cacao powder
  • 1/2 cup melted coconut oil
  • 1/3 cup maple syrup
  • 2-3 T Raw Cacao nibs
  • 1/2 tsp course sea salt
  1. Blend all ingredients (with exception of sea salt) in afood processor.
  2. Line a small pan with parchment paper and spread out mixturepressing into the pan.
  3. Sprinkle with sea salt and lightly press into thesurface. 
  4. Chill in freezer for at least 1 hour. Cut into pieces.

Naturally Nourished Health Bite:

Coconut oil, a mediumchain fatty acid, can rev up your daily caloric burn and aid in weightloss.  It also has been shown to improve the ratio of good cholesterol(HDL) to bad cholesterol (LDL). 

Coconut oil is rich in antioxidants andhas anti-inflammatory properties.  It is anti-fungal, antiviral, andantibacterial with the active compound Lauric acid, which is believed to fightinfections.

Although very healthy, it is still considered a fat and at 120calories per tablespoon- consume in moderation!
