Springtime in Houston means warmer temperatures and blooming flowers. But, what's really important is that it's crawfish season!
There are a lot of places you can go around town to get the fresh mudbugs, but one place puts an unusual spin on the crustaceans.
Crawfish & Noodles combines the best of Cajun and Vietnamese cuisines all under one roof. The crawfish are served by the pound, coming out in large plastic bags that keep them hot and juicy while you crack them open and fight for every last drop of meat and juice.
Food blogger Mai Pham recently visited with owner Trong Nguyen. She asked him how he came up with the recipe for his restaurant's version of crawfish.
"We get the family together and cook in our backyard," he said. "We add this and that and keep tasting them. There is a lot of trial and error until we get what we think the customers will like."
The final product, Pham said, is a wonderful spicy and savory version that can be seen piled up at tables throughout the restaurant.
But, Pham says you shouldn't just stop with the crawfish. Crawfish & Noodles serves up a lot of unique Vietnamese dishes, with one in particular really shining.
That would be the Vietnamese blue crabs. Seasoned and cooked in super-hot woks, the crabs come out with a crispy cover of garlic, onions, and other spices that merge perfectly with the sweet crab meat.
